Acclaimed chef Nikos Pouliasis joins forces with Captain’s Boutique Hotel organizing our Cooking Classes and Fine Dining menus, also for non-hotel guests.

The chef is a true soul food master, renowned for his artistry in gastronomy and his unique ability to reinvent himself. His original twists on recipes are executed with the same zeal and boldness over the years.

Owner of the famous Koukoumavlos Fine Dining restaurant in Santorini for 40 years, he is always seeking a balance between texture and flavor and never hesitates to experiment. Intrigued by traditional, healthy and cutting-edge approaches, he creates exciting, highly original dishes.

His kitchen is home to fresh local products, herbs and spices, as well as special gluten-free ingredients from all over the world. So, expect hard to find dishes with each one showcasing a playful twist on Mediterranean or Greek favorites!

Chef Nikos Pouliasis is acknowledged in Greece and abroad. He won numerous awards, including the Toques d’Or -Golden Hat (Chrysos Skoufos). 

Diners can pick amongst 3 fixed menus: Fish menu, Meat menu and Vegetarian menu. Extra suggestions include risotto and pasta. The 5 course diners are paired with a thoughtful list of white and red wines from the Greek and the international terroir.
